Secret Of Digesting Newari Food

Among most of the qualities Newari people have, their cuisine is one of the best things ever that everyone should taste. One of my Brahmin friends once told me, “Newari people’s cuisine is so far better than ours especially in Dashain. Ours is just the kabab of mutton, yours is like you have one buffalo, and like 100s of different dishes. I always have preferred your kinda feast than ours, too sad our caste forbids to eat buff meat.” That really is the truth. We do have lots of varieties of food in our feast. From one buffalo we have mainly choyela, mana choyela, kachila, sekuwa, dakula, takhala, bhuttan, chunla, khago, nhyapu, shapu mhicha, rakti, and lots more. Besides that we have bitten rice, rice, chicken, lots of varieties of beans (at least four in every feast so called “pyata jhasa” meaning “four dishes”), varities of achar (pickles), raw ginger with beans, wo, chatamari, green vegetables, and lots more. For sweet dishes we have curd and after that we have some pieces of oranges, radish, may be some apple, and some other preferable fruits.
While I was a kid, I heard some of the older people having this discussion, and one of them said that if a foreigner would have one of our feasts, they would certainly feel bad and will end up in the hospital. The other said, what would happen to them if they do that regularly as we do? And one answered, once a foreigner closely monitored all feast and the things we eat, and he too claimed that we Newars hae unbelievable digestion for the things we eat. That would kill any normal human beings with all those spices and foods we intake. And he finally found out it is our homemade alcohol which digests all the food we take. It is somewhat very true. I never take alcohol while I was kid, and later on in my adolescence too I didn’t drink but I had 1-2 drinks or sips of while I went to my adulthood. As I grow up and starting aging day by day, every feast actually upset my stomach. I will have hard time whole night as well as in the morning, so once I thought of having some of that wine after a big feast. To my surprise, I didn’t get any bloating or guarding of my stomach. From that day, I started having at least a sip of that wine to digest all the food I intake. So, if you are in a Newari feast, do not forget to have at least one sip of our homemade wine after all those spicy foods. That’s the secret of digesting Newari food.
